Salsa Verde

Serves 4 as a side

Ingredients

  • 1 cup mint leaves, finely chopped

  • 1 cup basil, finely chopped

  • 2 spring onions, chopped

  • 1 tbsp capers, chopped

  • 2 dill pickles, diced

  • ½ cup green olives, pitted and diced (or none)

  • ½ tbsp apple cider or white wine vinegar

  • 1 – 2 garlic cloves, finely chopped (or none)

  • 2 – 3 anchovies, chopped (or none)

  • Sea salt (or none)

Method

  • 1.

    In a large bowl mix everything together. Adjust seasoning to your liking.
