This recipe is from episode 26 of Good Chef Bad Chef series 3.


  • 1 pineapple

  • 1 tbsp coconut palm sugar

  • 4 limes made into Lime juice

  • cold water

  • mint leaf


  • 1.

    Remove the outside and de-core the pineapple.

  • 2.

    Slice into thin pieces.

  • 3.

    Place in saucepan and cover with water.

  • 4.

    Add mint leaf, lime juice and coconut palm sugar and bring to the boil.

  • 5.

    Once pineapple is cooked through, blitz and slowly add more lime juice to taste.
