Steamed Italian Fish

This recipe is from Episode 15 of Good Chef Bad Chef Series 3

Ingredients

  • 2 x 150g Barramundi fillets

  • 4 tomatoes, diced

  • 1 handful olives, pitted

  • 1 handful basil

  • 2 garlic cloves

  • ½ cup char-grilled capsicum cut in thin strips

  • 1 tbsp preserved lemon, julienned

  • ½ cup each of red and white quinoa, cooked

Method

  • 1.

    Steam Barramundi fillets, tomatoes, olives, basil, garlic, capsicum and lemon together in a bowl in a steamer basket.

  • 2.

    Serve with red and white quinoa.
