Semolina Pudding

This recipe is from Episode 12 of Good Chef Bad Chef Series 3

Ingredients

  • 5 cups of water

  • 1 cup of coconut palm sugar

  • ½ cup of honey

  • slice of lemon peel

  • 3 sticks of cinnamon

  • 2 – 3 cloves, whole

  • 2 cups of semolina, coarse grind

  • 1 cup of safflower oil

  • ¼ cup of walnuts, crushed

  • ¼ cup of pine nuts

  • ¼ cup of golden raisins

  • 1 tbsp agave

  • rind from one lemon

  • ½ cup passion fruit pulp

Method

  • 1.

    In a saucepan, add water, sugar, honey, lemon peel, cinnamon, and cloves and boil gently for 1 – 2 min. Add safflower oil and slowly add semolina whilst whisky through. Once thick, add raisins, pine nuts, water and stir. Add walnuts.

  • 2.

    Spoon onto plate and cover with passion fruit and agave. Garnish with lemon rind.
