Preheat the oven to 200°C fan forced.
Wash red delight potatoes thoroughly under warm water using a brush.
With a fork, prick the red delight potatoes all the way round, approximately 4 to 6 times.
Wrap each of the red delight potatoes in aluminium foil, place onto a baking tray and place in the oven, depending on the size, bake for about 50 minutes or until potatoes are cooked and soft in the centre.
Take the red delight potatoes out of the oven and carefully remove the foil, place back onto the baking tray and return to the oven for a further 5 to 10 minutes.
Place red delight potatoes onto serving plates, cut across the top and squeeze the sides to open them up.
Using a fork fluff up the inside of the red delight potatoes sprinkle with salt, top with butter, sour cream and chives.
Tip: Insert a skewer into the potatoes to check if they are cooked and soft in the centre.
Variations: Instead of using plain butter try with herb and/or garlic butter, try with cottage cheese or ricotta.
