Mediterranean style Octopus.. char grilled to perfection.
Have the octopus cleaned by your fishmonger as it is quite messy.
Place the octopus in a large pot without any liquid and place a lid on the pot and turn the heat on quite low.
Let it cook slowly and it will release all it's own natural juices and start to braise in its own liquid.
Occasionally check and turn the octopus in the liquid and cook for approximately one hour, remove it from liquid and discard liquid.
When it has cooled down enough to handle you may want to scrape some of the fat from the tentacles and cut the tentacles off and discard head.
Marinate it in lemon juice, salt and olive oil and let it cool down completely and leave to marinate in the fridge for a few hours or even overnight.
The following day heat the BBQ until hot and char grill the Octopus until charred nicely and serve with lemon juice and chopped parsley.
