Heat oil in a fry pan.
Season Game Farm Quail Medallions with salt and pepper, place into the pan and cook gently until just cooked, take out and set aside.
Add butter to the pan, once butter is melted add onions and garlic, cook for one minute before adding mushrooms. Cook for a further three minutes and then add paprika and cream.
Simmer until sauce thickens, add Game Farm Quail Medallions, heat and serve.
Serve on a bed of green beans or with fresh salad, rice or soft polenta. Variation: Try using half sweet paprika and half smoked paprika.
