Deliciously moist breast of chicken in baking paper parcels
Pre-heat oven to 180 degrees (160 for fan-forced)
Spray a frypan with oil and set to medium heat.
While the pan is heating up, slice chicken breasts into 3-4 smaller pieces, slicing the thickest part of the breast crossways in half.
Cook both sides of the chicken in the frypan until just browned and take off the stove.
Place chicken on separate pieces of baking paper, enough to be wrapped around the whole piece.
Using a knife, spread each piece of chicken with mustard.
Chop the zucchini into thin slices and the cherry tomatoes in half.
Layer the chicken with zucchini slices and top with cherry tomatoes.
Season with salt & papper and wrap into little parcels.
Place in the oven to cook for approximately 10-15 mins.
Once cooked, serve either in the parcels or without, with a side salad or steamed vegetables.
