Try this recipe for crispy hasselback potatoes seasoned with rosemary, salt and pepper.
Preheat the oven to 220°C fan forced & line a baking tray with baking paper.
Cut the golden delight potatoes in half lengthways or quarters if they are large. Place cut-side down on a board. Using a sharp knife make small vertical cuts through each golden delight potato, taking care not to cut all the way through.
Heat the butter and oil together in a small saucepan in the microwave until melted and warm. Brush over the golden delight potatoes then season with rosemary, salt and pepper.
Roast for 35 minutes, basting with more butter mixture every 10 minutes until golden and crunch. Serve.
