For crispy potatoes on the outside and fluffy potato on the inside make sure you par-boil them first!
Preheat oven to 200°C fan forced. Place red delight potatoes in a large saucepan. Cover with cold water. Cover with a lid and bring to the boil over high heat. Reduce heat to medium. Partially cover saucepan and simmer for 10 minutes or until red delight potatoes are just tender when tested with a skewer.
Drain the red delight potatoes. Return to the hot saucepan over low heat. Cook, gently shaking saucepan, for 1-2 minutes to remove any remaining moisture from the red delight potatoes. Remove from the heat. Cover the saucepan and shake vigorously to roughen surface of the red delight potatoes (this will make the potatoes crunchy when roasted).
Pour oil into a large roasting pan. Place in oven for 3 minutes or until hot. Working quickly, add red delight potatoes to hot oil. Turn to coat. Return pan to the oven and roast for 30-35 minutes, turning the red delight potatoes every 10 minutes until crisp and golden. Season with salt. Serve.
