Enjoy these Portuguese spiced baked potato skins with sour cream and sweet chilli sauce.


  • 10 (160g each) red delight potatoes, unpeeled

  • olive oil cooking spray

  • 1-2 tsp portuguese spice blend (see below)

  • lite sour cream & sweet chilli sauce, to serve

    Preheat the oven to 180°C fan forced. Line a baking tray with non-stick baking paper.

  • 2.

    Pierce the red delight potatoes all over with a fork. Place the red delight potatoes directly onto the oven rack and bake for 40 minutes or until just tender when tested with a skewer. Remove from oven and set aside for 15 minutes or until cool enough to handle.

  • 3.

    Cut the red delight potatoes into quarters lengthways. Use a teaspoon to remove the potato flesh, leaving 1/2cm flesh still on the skin. Place red delight potato skins onto tray, skin side up. Spray with oil and sprinkle with half the seasoning. Turn red delight potato skins over and repeat with oil and seasoning. Bake for 12-15 minutes or until golden.

  • 4.

    Serve with sour cream and sweet chilli sauce.


Portuguese spice: combine 1 tsp paprika, 1/4 tsp ground cinnamon, 1/4 tsp ground cayenne pepper and 1/4 tsp salt.
