Place the golden delight potatoes in a large saucepan and cover with cold water. Bring to the boil over high heat. Remove from the heat and allow to stand in hot water for 3 minutes. Drain well and set aside to cool. Pat dry with paper towel.
Preheat the oven to 170°C/150°C fan forced. Coarsely grate the golden delight potatoes into a large bowl. Add the onion, egg yolks and season with salt and pepper. Stir to combine. Cover the surface of the mixture with plastic wrap.
Pour enough oil into a frying pan to just cover the base. Heat over medium heat until hot. Using 1/4 cup of mixture per hash brown, cook in batches for 6-8 minutes each side or until golden and crispy. Transfer to a wire rack over a lined baking tray, place into oven to keep warm while you cook the remaining hash browns. Season with salt and pepper. Serve.
