This is a wonderful Spanish recipe. The translation is "potatoes omelette". Everybody love this recipe. We always use olive oil, but if it´s difficult to find it in Australia, just use sunflower, soya, seed or colza oil.

  • 1 kg of potatoes

  • 2 Big onios

  • Salt

  • 6-8 Fresh Eggs

  • Olive Oil (or seed, soya, sunflower...)


  • 1.

    Wash and peel the potatoes and cut them into thin slices. Peel 2 big onions and cut them into "brunoise" pieces. Warm a big pan, stir 1 litre of olive oil and when the oil starts becoming hot, add the potatoes and the onions, put some salt as desired. Remover from time to time keeping medium fire. It will need aproximately 30-35 minutes, depending of the potatoes hardness.

    Take a skimmer to take the potatoes and onions out into a bowl. Beat 8 eggs and mixed them with the potatoes and onions. Heat an anti-adherent pan, put the mixed eggs+potatoes+onios into the hot pan, turn the omelette and enjoy it!!
