Salsa Verde

Demonstrated at the 2011 Melbourne Food and Wine Festival.

Ingredients

  • ¼ cup aji mirin

  • ½ cup rice wine vinegar natural

  • ½ bunch mint, leaves only

  • ½ bunch cilantro, washed and roughly chopped, stems and all

  • 6 sprigs Thai basil, leaves only

  • 2 ½ cloves garlic

  • ½ shallot

  • 1 ½ serrano chilies

  • 1 ½ jalapenos

  • 1 lime, squeezed

  • 1 ½ tbsp sesame seeds, toasted

  • 1 ½ tomatillos, washed

  • ½ cup canola oil

  • ½ cup extra virgin olive oil

  • 2 pinches sea salt

  • 1 pinch white pepper, freshly ground

Method

  • 1.

    Purée ingredients in a blender till smooth, adding oil slowly.
