Lemongrass Purée

Demonstrated at the 2011 Melbourne Food and Wine Festival.

Ingredients

  • 1 ½ stalks lemongrass, minced

  • 1 cup or 1 ½ full stalks of peeled ginger, roughly chopped

  • 1 cup garlic cloves

  • 1 cup aji mirin

  • 1 good pinch of sea salt

  • 1 tbsp sugar

  • 1 tbsp coriander seeds, freshly ground

  • ½ bunch cilantro, washed and roughly chopped, stems and all

  • 1 cup rice wine vinegar, natural

Method

  • 1.

    Put all ingredients in a blender and purée till smooth..
