I made this by accident one day when I had left over rice and didn't want to throw it out. So I thought what can I quickly throw together , and I felt like tuna .So when I went to get the tuna I saw a can of corn and grabed that too.So then I had to add flavour I opened the fridge and felt like something a little spicey and grabed the sweet chile sauce and wow what a combination!


  • 1 cup of any rice

  • 1 small can of sweet corn or 1\2 cup frozen

  • 1tbsp sweet chile sauce

  • a good pinch of dried parsley

  • a small pich of pepper

  • a small can of tuna with olive oil


  • 1.

    Cook the rice or have left over rice ready

  • 2.

    Add the tuna with the oil

  • 3.

    Add the rest of the ingredients

  • 4.

    Mix together

You may alter the ingredients to your taste.I always use basmati rice as it is tastier and low GI for diabetics. My small girls love this dish , it makes a great lunch .
