A refreshing take on lamb cutlets with mimum fuss and maxium flavour with just 4 ingredients.


  • 1 tub of pesto (your choice, I use original)

  • 2 teaspoons of lemon zest

  • 16 Lamb cutlets

  • 3 tablespoons of butter


  • 1.

    Combine pesto, lemon zest and butter and put tablespoons of this onto each lamb cutlet. Warp in a foil envelope and bake in oven 180 degrees (160 if fan force oven) for 50 mins.


Goes well with either a salard or some simple vegies, this quantity is for 8 people with two cutlets each.
