Put the butter & sugar in a bowl beet it till light, add the flour ,rice flour & salt & make it to a soft dough.then shape it to a flat disc & wrap in a clingfilm & let it chiil for abt 30 min.
Oil & line a 8 inch square baking tin with oil paper...then roll out the dough on floured surface & press it to the prepared tin...smoothing it flat as possible & bake in a pre heated ovenfor 20 -25 mintill golden.
Then remove from oven & let it cool.
For the carramel -put the butter ,sugar & condensed milk in asaucepan & heat gently stirring constantly untill the butter has melted,& the suger has completely dissolved.then increase the heat & bring to boil, whisking constantly for abt 5 min till the mixture thickens then remove from heat & add the chopped cashew nuts & mix then add this mixture to the short bread layer & leave it to set.then chill it for 2 hours till firm..
Then melt the chocolate (double boil it) & pour itover thecaramel layer & spread it evenly & let it set & remove from tin & cut it in to squares.
