Introduce your family to lentils the Donna Hay way!


  • 2 teaspoons vegetable oil

  • 1 onion, finely chopped

  • 2 rashers bacon, finely chopped

  • 1 teaspoon thyme leaves

  • ¾ cup (150g) red lentils

  • 1.25 litres (5 cups) chicken stock

  • Sea salt and cracked black pepper

  • Finely grated parmesan and sour cream, to serve


  • 1.

    Heat a saucepan over medium-high heat.

  • 2.

    Add the oil, onion and bacon and cook for 4 minutes or until lightly browned.

  • 3.

    Add the thyme, lentils and stock, cover and simmer for 20 minutes or until the lentils start to break down.

  • 4.

    Stir in salt and pepper.

  • 5.

    Ladle between bowls and top with parmesan and sour cream to serve.

I made this a Lentil, bacon and sausage soup. I deskinned 3 good Italian pork sausages, rolled the minceinto small balls and added them with the bacon. Also added 2 x chopped fresh tomatoes. Instead of sour cream used some left-over yoghurt, mint and coriander sauce from Indian curry night the evening before. With the Parmesan, absolutely amazing! Now a go-to dish.

This is truly a fantastic soup - and so fast! I love the taste of fresh thyme so admit to adding more, I'm always making it!

I made this soup but as I didnt have much bacon I added a smoked bacon bone. The flavour was sensational and I will certainly make it again. So easy for a cold winter night and quick. With the bacon bone there was a little meat so I just used a fork to break off ham ot add a bit more bulk. Serve with warm crusty bread.

I have got the onions ready lentils i do hope mine will taste as good as donns receipes look i need to buy some french stick he goes my wait again thanks alot for the receipe

This soup is just fantastic. It tastes fantastic. The amounts could serve 4.
