Need to do some last-minute baking? Donna Hay's Standby Brownies are the perfect answer 


  • 150g butter

  • 1¼ cups (275g) caster (superfine) sugar

  • ¾ cup (75g) cocoa

  • 1 teaspoon vanilla extract

  • 3 eggs

  • ½ cup (75g) plain (all-purpose) flour


  • 1.

    Preheat oven to 160°C (325°F).

  • 2.

    Place the butter, sugar and cocoa in a saucepan over low heat and stir until the butter has melted.

  • 3.

    Spoon into a bowl and add the vanilla and eggs, whisking well. Sift the flour over the mixture and whisk to combine.

  • 4.

    Spoon the mixture into a 20cm-square cake tin lined with non-stick baking paper. Bake for 30–35 minutes or until centre is just set.

  • 5.

    Cool in tin and cut into squares to serve.

Hi, I make a double batch of these yummies almost every week. I am thinking of maybe adding some cranberries and nuts to the top to make them more Christmassy and gifting them. Do you think they would keep for 10 days in an airtight container if not gobbled up?

Many thanks to Julie202 for the info about making this recipe with Gluten Free flour. I'm not Coeliac, but friends & family are, so this information is very much appreciated.
Haven't made it yet, but tasted it today - a friend made it & told me it was the Donna Hay recipe, so I know it tastes great - will have a go at making it soon.
