Cut each full cheese round into six wedges.
Beat eggs with milk.
Coat each cheese wedge in flour.
Dip in beaten eggs then coat with breadcrumbs, chill 5 minutes then repeat egg and breadcrumb process to achieve thick coating. Chill until ready to deep fry.
Prior to frying cheese, place quince paste in a small saucepan, add verjuice and stir over low heat until melted and combined, keep warm until serving.
Heat oil. If oil starts to smoke it's way too hot, turn off heat and wait a few minutes. Place cheese wedges in oil and fry until golden brown, around 30 seconds. Place on paper towel to drain.
Arrange three cheese wedges on a bed of rocket with crisp bread (if desired), spoon quince verjuice sauce over cheese and serve immediately.
Keep cheese chilled before and during crumbing process to avoid potential mess.
