This recipe came from an old copy of home beautiful or house and garden. It is so easy made the night before and has a real wow factor, at christmas I make it in cake tin shaped like a christmas tree.

Ingredients

  • 1 large ripe avocado

  • 2 level teaspoons gelatine dissolved in .25 cup of hot water

  • 2 tablespoons lemon juice

  • 1 heaped tablespoon finely grated onion

  • half bunch of dill finely chopped

  • couple of drops of tabasco

  • pinch of salt

  • 1x 200g tin of premium skinless boneless salmon

  • 3 level teaspoons of gelatine dissolved in .25 cup of hot water

  • .25 cup tomato juice

  • .25 cup whole egg mayonaise

  • couple of drops of tabasco

  • 1 tablespoon of finely grated onion

  • .25 cup finely chopped celery

  • pinch of salt

Method

  • 1.

    Mash avocado

  • 2.

    Add lemon juice,grated onion,chopped dill,tabasco and salt

  • 3.

    Mix well

  • 4.

    Dissolve 2 teaspoons of gelatine in .25 cup of hot water and add to avocado mix

  • 5.

    Line a loaf pan with glad wrap and spoon avocado mix into tin smooth with a spatula put into fridge

  • 6.

    Put tin of salmon liquid and all into a bowl,mash with fork to break up

  • 7.

    Add onion, celery,tomato juice,mayonaise,tabasco and salt mix together

  • 8.

    Dissolve 3 teaspoons of hot water into .25 cup of hot water add to mix and stir through.

  • 9.

    Put this layer on top of avocado layer cover with glad wrap and put back in fridge over night

  • 10.

    Take mousse out of tin by placing loaf pan onto serving platter remove glad wrap about 10 minutes before serving.

I use safcol premium boneless skinless salmon I have found this to have the best flavour
