TO MAKE DRESSING:
Combine all dressing ingredients except oils in a food processor and process until smooth. Slowly add oils in a steady stream and process until dressing has emulsified.
TO MAKE SALAD:
Chop bacon and cook with a little oil in frying pan until crispy. Drain on absorbent paper.
Place slices of bread in a hot pan with oil and fry until golden. Drain on absorbent paper and then rub a clove of garlic on to each side and chop into small cubes to make croutons.
Chop hard boiled eggs and push through a garlic press.
Combine lettuce, bacon, eggs, croutons, anchovies and dressing.
Slice parmesan with a pototo peeler to make thin slices and put on top of salad with anchovy fillets.
