  • Salt Cod:

  • 1 ½ lbs salt cod, soaked for 48 hours in 3 changes of water

  • 2 tbsp olive oil

  • 1 stalk spring garlic

  • 2 cinnamon sticks

  • 5 sprigs of thyme

  • 1 bay leaf

  • ¼ cup white wine

  • 3 cups milk
