It is a whole red snapper lightly spread ed with seasoned flour and then dip fried served over a thing layer of mashed potato and topped with a fresh red onion salad.


  • for the fish : All purpose flour, salt, white pepper, ground ginger, granulated garlic. and smoked paprika .

  • For the Onion salad : Fresh red onion, salt, black pepper, fresh chopped parsley, fresh lime juice, white vinegar and extravirgen olive oil .

  • For the Mashed potato : Combination of Yukon gold and Idaho potatoes, sweet unsalted butter, heavy cream, fresh chopped chives, S&P.


  • 1.

    First Pr-heat dip fryer at 365 f.

  • 2.

    Fish has to be fresh, make a few cuts on both side of the fish to avoid the curling when cooking, seasoned with salt and pepper, then spread the flour very well out and in the fish, start dip fraying for about 6-7 mins until nice and crispy.

  • 3.

    For the salad : Julienne thing the red onions, about 1/8. then make a little dressing with all the ingredients put in the onions and let it rest in the cooler, placed on topped of the fish before service.


careful not to over cooked the fish and keep the balance with the onion salad.
