Fresh and Crisp Jicama Mango Salad

Episode 7, Season 2 of Healthy Gourmet.


  • ½ medium red onion, julienned

  • 2 jicamas, peeled and julienned

  • 1 barely ripe mango, julienned

  • 1/4 cup goji berries

  • ¼ cup cilantro, chopped

  • 2 teaspoons lime juice

  • 1 teaspoon unpasteurized honey

  • sea salt and black pepper, to taste


  • 1.

    Place onion slices in a strainer over a bowl and season with salt. Place a weight over top and let sit for 10 minutes to press out liquid. Add remaining ingredients to a medium salad bowl. Combine onions with the rest of the ingredients and toss lightly. Serve with enchiladas.


Note: lightly soaking the goji berries in a small amount of water for 20 minutes will plump and soften them. Drain before adding to the salad.
