This recipe came about by experimenting with something a bit differant to do with chicken pieces. It was winter so wanted something warming, tasty & cheap. As my eldest daughter Amana loved it so much it was named after her. She now cooks it for her fiance.

Ingredients

  • 1.5kg Mixed Chicken pieces (use as much as you need for how many you are feeding I allow 2/3 piece per person & just double the rest of the ingredients)

  • 1 can cream of chicken soup

  • 250gms sliced mushrooms (1/2 cm slices)

  • 250gms diced bacon

  • 2 cloves garlic finely diced

  • 1 onion finely diced

  • virgin olive oil

Method

  • 1.

    In a large frypan or electric frypan very light coast with olive oil.

  • 2.

    Add onions, garlic & diced bacon & brown lightly.

  • 3.

    Add chicken pieces and brown quickly tossing through the bacon,garlic & onion.

  • 4.

    When chicken is browned transfer the whole lot into a large casserole dish.

  • 5.

    Add the mushrooms & can of cream of chicken soup & 1/2 the soup can of water and mix the the chicken pieces.

  • 6.

    With lid on casserole place in 175 degree oven for 40 minutes stirring occassionally.

  • 7.

    Serve with mashed potato, beans or any vegitables you like. It is also served with plain or fried rice....Enjoy
