A friend of mine's mother invented this and it is absolutely delicious. Don't add garlic, onion or anything else, just the 4 ingredients. I have never served this dish whereby people don't make a comment about it.

Ingredients

  • Chicken Breasts - depending on how many people - one each

  • Seeded Mustard

  • Dried Tarragon (MUST be dried)

  • Cream enough to reduce and make enough sauce for the chicken

  • Cut breasts into 3 slices, smear with mustard and lots of Tarragon. Gently fry on both sides for a couple of minutes, throw in the cream and wait for the sauce to reduce and caramelise. Make mashed potatoes (I always put in part of a Mascell Chicken Stock Cube for flavour, add some finely chopped brown onion or eschallots with some of the green, a good amount of minced fresh garlic, butter and milk. Honeyed carrots, minted peas, steamed broccholi, put the mash in the middle, build the chicken peices on top of the mash and place carrots, broccholi and peas around the plate. Drizzle with the sauce. YUMMY!

Make mashed potatoes (I always put in part of a Mascell Chicken Stock Cube for flavour, add some finely chopped brown onion or eschallots with some of the green stems, a good amount of minced fresh garlic, butter and milk. Honeyed carrots with some chopped fresh parsley through them, minted peas, steamed broccholi. Put the Mash in the middle, layer the chicken peices on top of the mash and place carrots, broccholi and peas around the plate. Drizzle with the sauce. YUMMY

I'm a huge fan of dried tarragon - especially with chicken but I'm not that fussed on fresh tarragon as the flavour is completely different. This chicken dish sounds really yum. Thanks Charlie!
