You can basically do this while nattering to your best friend on the a handsfree mobile, it is so painless to prepare. The smells will draw people into the kitchen. It is called winter soup because jerusalem artichokes come into season in winter, but if using potatoes as a substitute, you can enjoy this recipe any time of the year.


  • 2-3 ham hocks

  • 1/2 kilo jerusalem artichokes, washed and quartered

  • 2 leeks, chopped

  • fennel tops

  • garlic

  • butter 1 tablespoon

  • 1 cup white wine

  • 3 cups water


  • 1.

    Butter and garlic on medium low heat til soft.

  • 2.

    Add water and ham hocks, bring to the boil.

  • 3.

    Add artichokes, keep water boiling for 10 mins.

  • 4.

    Add leek and white wine, simmer for 20-30 mins.

  • 5.

    Spoon into rustic ceramic bowls, garnish with fennel tops.


Tiny potatoes will do the trick if you can't locate Jerusalem artichokes. You know, the kind that come on sale for $2 a bag at the close of market on a Sunday.
Avoid blending this soup to enjoy the visual of the ingredients in the broth.
