We all love Ice Cream! There are plenty of flavors here in Chile. Everyday more flavors are being created since the competence turns bigger, even ones with no common names like Sky, Princess' dreams, Condensed Milk, or Bride's veil! All delicious I have to say but too high in fat and calories... Then I watched on TV a homemade version of ice cream which I made better in order to make it lower in fat and calories, and thus to allow us to have more that one portion if we want.
Mix the plum jam with the plain yogurt. Then add the blueberries previously smashed with a fork. Then whip the cream. In a pot put half cup of water to boil and add 3 tablespoon of sugar. Make a syrup until thick. Making a syrup is a full time job! Whisk the egg whites until stiff and carefully add the still warm syrup without stopping whisking. When all the mixes are ready put them all together but don´t mix them just integrate them. Once it is done, drain the mix into a recipient and take to the freezer up to 6 hours (probably 4 or 5 are Ok depending on the freezer). Then try it! Enjoy it!
Don`t smash the fruit so much it would be great to have so little big pieces of blueberry while enjoying the ice cream.
For making a stiffer whisked eggs add a very little salt and 1 or 2 drop of white vinegar.
