Seared Parcels of Salmon wrapped in Prosciutto::
Slice 2cm wide strips off the length of your salmon fillets.
Wrap the salmon strips in prosciutto and secure with toothpicks.
Cook in medium hot frypan for approximately 2 – 3 min each side until prosciutto is crispy. Remove toothpicks before turning.
Fresh Green Mixed Leaf & Red Fruit Salad::
Dice the tomatoes, strawberries and watermelon into small portions.
Combine with your green leaf salad mix and arrange in a heaped pile on the centre of your plate.
Warm Honey Soy Balsamic Vinaigrette::
Over a low heat combine the honey, soy sauce and balsamic vinegar for approx 1 minute.
Take off the heat, add salt, stir and let rest.
