Chocolate and Raspberry Fondant with a Sugar Pencil

Anita's Dessert, Series 3, Come Dine with Me Australia.

Ingredients

  • 1 large tub thickened cream

  • ½ block Whitakers milk chocolate

  • ½ block Whitakers dark chocolate

  • 1 punnet strawberries

  • 1 punnet raspberries

  • 2 tbsp honey

  • 2 tbsp Baileys Irish cream

  • 1 tbsp Frangelico

  • Sprigs of mint

  • Sugar Pencil:

  • 100 ml water

  • 500 ml white sugar

  • 1 tsp white vinegar

Method

  • 1.

    Melt all chocolate on a low heat.

  • 2.

    Mix Baileys and Frangelico with half a tub of cream in separate dish add melted chocolate and whisk til creamy.

  • 3.

    Put honey and raspberries in container and blend until creamed together, then place in fridge until serving time.
