Shane's Dessert, Series 3 Come Dine with Me Australia.
Preheat oven to 180 degrees and cook puff pastry for 35 minutes on a flat baking tray.
Stir 150g of sugar & 150ml water in a small saucepan on a low heat, until the sugar dissolves.
Increase heat to medium and boil for 4 mins, until syrupy. Remove from heat.
Using an electric mixer, beat yolks until creamy.
Add sugar syrup and beat until very pale and mixture triples in size.
Fold through cream and ginger.
Freeze overnight in an airtight container.
Stir wine, remaining sugar, spices and rind in a pan on medium heat until sugar dissolves.
Stand pears in wine. Cover with baking paper or foil.
Simmer for 40-45 minutes.
Boil wine on high for 10 minutes, until syrupy.
Add pears to reheat and serve drizzle sauce over pear.
Sprinkle icing over puff pastry.
Put pear, semi-freddo & puff pastry in a bowl and serve.
