Mary's entree of grilled lamb cutlets dancing around a mound of rocket and pear dressed with black truffle oil crowned with oven roasted cherry tomatoes and grilled bread sticks from Series 3 of Come Dine With Me Australia.
Sprinkle sea salt and cracked pepper over cutlets.
Heat pan until hot.
Grill cutlets on both sides to seal and place in pre-heated moderate to low oven for 5 minutes.
Slice bread sticks. Sprinkle them with sea salt, drizzle lightly with oil and place on a grill pan for a few minutes.
Wash rocket and set aside.
Wash and cut the pear in half, remove core and cut into thin slices.
Season rocket and dress with a drizzle of extra virgin olive oil and arrange pear and rocket in a mound in the centre of the plate.
Remove cutlets from oven and place lamb cutlets upright either side of salad, crown with cherry tomatoes and drizzle with black truffle oil and cracked pepper.
Serve with grilled bread sticks on the side.
