Asparagus wrapped in Prosciutto; Goat’s Cheese wrapped in Roasted Capsicum; Sweet and Spicy Olives

Ingredients

  • Asparagus wrapped in Prosciutto

  • 2 bunches of asparagus

  • 10 strips of prosciutto

  • Goat’s Cheese wrapped in Roasted Capsicum

  • Two capsicums

  • Olive oil

  • Goat’s cheese

  • Salt and pepper to taste

  • Tooth picks

  • Sweet and Spicy Olives

  • Large tub Kalamata olives

  • Olive oil

  • Orange zest

  • Lemon zest

Method

  • Asparagus wrapped in Prosciutto:

  • 1.

    Heat oven 200 degrees.

  • 2.

    Wash asparagus, break off end stringy ends.

  • 3.

    Blanch in hot water for 2 minutes.

  • 4.

    Wrap asparagus in prosciutto.

  • 5.

    Place on baking tray and in oven for 5 minutes.

  • Goat’s Cheese wrapped in Roasted Capsicum:

  • 1.

    Heat oven 200 degrees.

  • 2.

    Wash capsicum.

  • 3.

    Place in a baking tray and cover with olive oil, salt and pepper.

  • 4.

    Roast for 35 minutes or until outer skin is blistered.

  • 5.

    Remove from oven and allow to cool.

  • 6.

    Remove the outer skin.

  • 7.

    Cut into strips 3 cm wide.

  • 8.

    Cut cheese into squares.

  • 9.

    Wrap the roasted capsicum round the cheese and secure with a tooth pick.

  • Sweet and Spicy Olives:

  • 1.

    Wash olives.

  • 2.

    Crush olive.

  • 3.

    Combine oil, fennel, orange and lemon zest in a saucepan and heat until boiled, add olives to heat through.

  • 4.

    Drain oil and serve with finely diced onion.
