It's delicious, well balanced & easy to make!
Pre-heat oven at 150 degrees for fan forced oven
Slice potatoes in thin rounds, including skin
Par-boil potatoes, then place on oven tray & drizzle with olive oil & sprinkle oregano & pine-nuts then place in oven
Prepare salmon in alluminium foil parcels, with a splash of white wine, salt & pepper & butter, place in oven when potatoes are almost cooked
Prepare sauce in saucepan, with a dash of white wine & lemon juice & bring to the boil
Add seeded mustard & cream, stir & bring to boil then reduce & lower heat to simmer
Toss baby spinach in bowl with grated cheese & salt & pepper then place in centre of plates to make a "bed" of spinach
Remove potatoes from oven & place evenly around bed of spinach
Remove salmon from foil parcels & place on top of spinach bed
Drizzle with sauce & serve!
Serve with a glass of Sauvignon Blanc!
