Boil the corn husks in boiling water for approximately 5 minutes.
Remove from water and prior to placing on bbq or char grill, baste in butter.
Cook for approximately 8 minutes until husks are perfectly golden.
Let corn cool for 2 minutes and cut corn off the cob and place into a bowl with tomatoes, olive oil, vinegar, basil, parsley and seasoning to taste.
Lightly dust the Rockling with flour and cook on a medium heat for approximately 4 minutes each side – turning only once.
Spoon the relish onto the Plated Rockling.
