Rockling Fillet with Cherry Tomato, Charred Corn & Basil Relish

  • 5 Rockling Fillets

  • 2 Corn cobs

  • 2 tbsp balsamic vinegar

  • Olive oil

  • 2 punnets of cherry tomatoes (one red, one orange)

  • Small bunch of basil leaves

  • Small bunch of continental parsley


  • 1.

    Boil the corn husks in boiling water for approximately 5 minutes.

  • 2.

    Remove from water and prior to placing on bbq or char grill, baste in butter.

  • 3.

    Cook for approximately 8 minutes until husks are perfectly golden.

  • 4.

    Let corn cool for 2 minutes and cut corn off the cob and place into a bowl with tomatoes, olive oil, vinegar, basil, parsley and seasoning to taste.

  • 5.

    Lightly dust the Rockling with flour and cook on a medium heat for approximately 4 minutes each side – turning only once.

  • 6.

    Spoon the relish onto the Plated Rockling.
