Doreen's Entree, Series 3 Come Dine with Me Australia
Soak bread in the potato juices.
Place all ingredients together and combine.
Heat oil till hot.
Shape into balls and fry until golden brown.
Roasted Pita Bread::
Apply a thin layer of margarine onto pita bread.
Top with herbs.
Slice and roast.
Prick eggplant with a fork and roast well.
Let eggplant cool, then process in blender.
Add tahini, garlic and lemon juice.
Place into fridge.
Spinach and Cheese Filo Triangles::
Add onion till softened.
Add spinach until wilted.
When cool add herbs and eggs.
Add cheeses, season and mix well.
Cut filo into 4 inch wide strips.
Brush with melted butter.
Top with filling and fold into triangles.
Cook in a hot oven until golden brown.
Rice Filled Vince Leaves::
Rinse and drain vine leaves and soak in boiling water.
Heat olive oil.
Add onions and garlic for 5 mins.
Then add tomatoes, herbs, pine nuts and season.
Stir through for 5 to 10 mins.
Lay leaves stem side up. Fill and wrap.
Place into pot.
Fill with water, lemon juice and olive oil.
Top with a plate.
Simmer for 45 mins.
Fried Haloumi Cheese::
Heat olive oil in a pan. When very hot fry each side until golden.
