Pan Fried Eggplant & Haloumi Cheese served on a bed of Rocket, Julienne Carrots, Spanish Onions with a dash of Balsamic Vinegar

  • 2 eggplants

  • 250g haloumi cheese

  • 250g rocket leaves

  • 1 carrot, julienned

  • 1 Spanish onion, finely sliced


  • 1.

    Cut eggplants & haloumi across one centimetre thick.

  • 2.

    Fry in pan until eggplant becomes slightly transparent & haloumi is lightly browned.

  • 3.

    Place eggplant & haloumi on top of rocket top with carrots & Spanish onions.

  • 4.

    Sprinkle over balsamic vinegar.
