Simple Chicken and potato dish with italian flavours!~
We grew up with this and it became a favourite.

Ingredients

  • 2 kilo Mixed Chicken pieces skin on

  • 4 - 6 Large potatoes cut into wedges

  • 3 - 4 Tbls oregano ( fresh is always best!)

  • 6 - 8 Tbls parmesan ( use one from a deli not the crap from a supermarket!!)

  • 3 - 4 cloves crushed garlic

  • 1/4 cup olive oils

  • salt and pepper to season

Method

  • 1.

    This is a very rustic dish, simply mix all the ingrediants making sure the chicken is coated well, and bake untill crispy in a hot oven! ( aprox 40 min )
