• 36 small sausages, such as chipolata sausages, or 700-800g of chipolata sausage cut into 3-4cm smaller sausages

  • 18 rashes of smoked streaky bacon

  • 18 cocktail sticks

  • 2 tbsp bourbon

  • 10 drops Tabasco, or to taste

  • 4 tbsp clear honey


  • 1.

    Preheat oven to 180 degrees Celsius.

  • 2.

    Stretch each rasher of bacon out with the back of a knife to avoid them shrinking as they cook.

  • 3.

    Cut each rasher in half horizontally and roll each piece around a sausage, using the cocktail sticks to keep the bacon in place.

  • 4.

    Place them on a non-stick baking tray.

  • 5.

    Mix the honey, Tabasco and bourbon together.

  • 6.

    Pour the mixture over the sausages and toss well.

  • 7.

    Bake for 35-40mins turning them once and basting at the same time until brown and piping hot.

  • 8.

    Serve with a sour cream dip.
