This is a meal you can have at anytime. It is perfect for winter when you crave a hearty and hot meal. Serve with my tomato relish and cooked bacon.
Grease and line a tin and preheat the oven at 220C
Sift all dry ingredients (not corn) into a mixing bowl and mix softly.
Make a well in the dry ingredients
Combine all wet ingredients (not corn) in a small jug and beat with a fork until all one colour.
Pour the wet ingredients in the well and combine with a wooden spoon.
When completely combined mix in the corn
Pour mixture into tin and cook for 20- 25 minutes or until golden brown.
When cooked cool down on a wire rack.
