I made this recipe up one day when i had nothing in the house except a few things. it is now a fav to whip up when i am not in the mood to make a huge meal


  • 1pkt Penne pasta

  • 1 Red capsicum diced

  • 1 Green capsicum diced

  • 1/2 Red onion chopped

  • 2 Garlic cloves chopped

  • 1c mushrooms chopped

  • 1tsp paprika

  • handful oregano, parsely fresh or dried

  • 1c grated parmesan

  • olive oil and balsamic vinegar


  • 1.

    Cook pasta in salted water drain and place in salad bowl, add the capsicum,onion, garlic and mushrooms and give it all a toss. then ad all the herbs give it another toss. add as much oil and vinegar as liked. give it a toss and top with some parmesan. enjoy.

i have tried this dish with red wine vinegar and it was not half bad. the one thing i like about this dish is you can ad or take away ingredients. i would serve with chicken/ beef. or have it on it's own
