These little cakes are like heaven in you mouth. With a soft outside and the creamy, rich liquid inside they're a delight to eat. Serve with a bit of fresh whipped cream or vanilla ice-cream at your next dinner party...


  • 100g Butter

  • 10g Icing Sugar

  • 4 Eggs

  • 75g Caster Sugar

  • 50g Ground Almonds

  • 100g Dark Chocolate (remember the better quality, the better the end result)


  • 1.

    Preheat oven to 200c/400F.

  • 2.

    Grease muffin tin.

  • 3.

    Whisk eggs and caster sugar in bowl until mixture is light.

  • 4.

    Add almonds to egg/sugar mix and whisk till smooth. Sit mix to sit.

  • 5.

    Melt chocolate and butter in saucepan.

  • 6.

    Add egg/sugar mix to melted chocolate butter mix and combine.

  • 7.

    Sprinkle pan with icing sugar.

  • 8.

    Add cake mix and bake in overn for 8 minutes.

  • 9.

    Allow cakes to sit for a couple of minutes, then remove them from tin.

  • 10.

    Serve hot with cream or ice-cream.


Replace Almonds with Hazelnuts for a different flavour.

Add a couple drops of coconut essence or vanilla extract for flavour.
