Spagbollie

Very very quick and easy meal if you have just got home from a few days away and you want a quick hot meal or if you want something quick and hot when you reach your holiday destination at the beach.

Ingredients

  • Pasta - Enough for 2 people (preferably macaroni or screws) Not canneloni tubes, lasagne sheets or ravioli.)

  • 250g minced beef/chicken/pork

  • 1 onion sliced

  • 2Tbs oil

  • 1 tin of chopped tomatoes (410g)

  • 250ml cheddar cheese

  • 2Tbs tomato paste

  • 1Tbs dried Italian herbs

  • Grated Parmesan cheese to sprinkle before serving

Method

  • 1.

    1.Fry the onion until transparent in the oil.

  • 2.

    2.Add the minced meat and stir until cooked.

  • 3.

    3.Sprinkle on the herbs and stir.

  • 4.

    4.Add the tinned tomatoes.

  • 5.

    5.Stir in the tomato paste.

  • 6.

    6.Let this mixture gently simmer while you cook the pasta.

  • 7.

    7.Mix in the grated cheddar cheese.

  • 8.

    COOK the pasta for 20 minutes on high in the Mike uncovered.

  • 9.

    Drain and add a big knob of butter and 1 tsp of salt and keep hot.

  • 10.

    Serve the pasta on warm plates and ladle the sauce over. Sprinkle generously with grated Parmesan cheese and ground pepper.

Notes

Tuck a bib under your chin and enjoy with lots of red wine !
