Bubble and squeak is a great way to use up any leftover cooked vegetables. It’s budget friendly, delicious, easy to prepare and when served up with eggs and red onion gravy, makes a wholesome meal that works for breakfast, lunch or dinner.

Ingredients

  • 1 carrot, peeled and chopped in to bite sized pieces

  • 1 parsnip, peeled and chopped in to bite sized pieces

  • 1 potato, peeled and chopped in to bite sized pieces

  • 2 handfuls cabbage, chopped

  • ¼ - ½ bunch of kale, stems removed and chopped

  • ½ leek, sliced

  • Butter or ghee, for frying

  • Sea salt and freshly cracked black pepper

  • 4 large eggs (preferably free-range or organic)

  • Gravy 

  • 1 Tbsp olive oil

  • 1 Tbsp arrowroot

  • 1 red onion, sliced

  • 175ml red wine

  • 2 springs fresh thyme

  • 500ml vegetable broth

  • 1 tsp balsamic vinegar

Method

  • 1.

    For the bubble and squeak pre-heat an over to 180’C. Place the carrot, parsnip, potato, cabbage in a baking tray, drizzle with ghee and roast and until they are very soft and begin to caramelise (approx. 40 minutes)

  • 2.

    Mash and smash your vegetables up so they are roughly combined

  • 3.

    Soften the leeks in a little butter and then mix these into the mashed vegetables. Season the mixture well with salt and pepper

  • 4.

    Divide the mash into patties, like a hamburger. Refrigerate for at least 30 minutes while you make the gravy

  • 5.

    For the gravy, heat olive oil in a frying pan and fry the onions until they are soft and slightly caramelised

  • 6.

    Add the arrowroot to the onion, stir and cook for 1-2 minutes. This will thicken the gravy once the liquid has been added

  • 7.

    Add the red wine and a couple of sprigs of thyme and on a high heat to reduce slightly. Bring to the boil and then simmer

  • 8.

    Add the vegetable broth and balsamic vinegar and leave the gravy to cook on a low heat

  • 9.

    Remove the bubble and squeak cakes from the fridge. Melt some butter or ghee in a frying pan and fry the cakes gently in the butter until browned and crisp on both sides

  • 10.

    While they are frying, check the gravy, and season with salt and pepper

  • 11.

    Melt a little more butter in another frying pan and fry your eggs season with salt and pepper

  • 12.

    Serve the bubble and squeak patties with the fried eggs on top and red onion gravy on the side
