Line a 28x18cm slice tray with foil. Combine the sugar and water in a medium saucepan. Stir over medium heat until sugar has dissolved, then bring to the boil.Gently boil occasionally brushing sides of pan with a pastry brush to avoid sugar crystals from forming, for 25mins or until golden color. Immediately remove from stove and stir in butter and peanuts with a wooden spoon, until just combined. Quickly pour mixture into prepared pan. Set aside in a cool place until set. Break brittle into pieces and store in a greaseproof paper-lined upright container with greaseproof paper between each layer.
