The carrot cake that we make in Brazil is simply carrot, no pineapple, no pecan and no cream cheese with butter top, we use chocolate for the topping.

  • ½ cup of vegetable oil

  • 3 grated carrots

  • 3 eggs

  • 2 cups of sugar

  • 2 ½ cups of plain flour sifted

  • 1 spoon of baking powder

  • For the topping

  • 1 spoon of unsalted butter

  • 3 spoons of chocolate powder

  • 5 spoons of milk

  • ½ tea spoon of corn flour


  • 1.

    Preheat oven to 180C. Grease and flour a baking pan.

  • 2.

    In a blender on low speed combine the grated carrot, eggs and oil, gradually mix in the sugar. Blend it for 5 min.

  • 3.

    In a bowl mix the flour with the baking powder and slowly fold with a spoon the carrot mix with the flour.

  • 4.

    Bake it for 40 min.

  • 5.

    For the chocolate topping

  • 6.

    Mix in a pan in low heat the butter, powder chocolate, the milk and the corn flour until is thick. Wait for the cake to be cold so you can put the topping.
