Try Kate's entree from week 4 of COME DINE WITH ME AUSTRALIA series 2.


  • Margaret’s Warm Scallop Salad

  • 4 scallops per person

  • 1 tbls olive oil

  • 1 tsp salt

  • 1 bunch of watercress, washed and the leaves picked off

  • Scallop Dressing

  • Juice of 1 lemon

  • Pinch of salt and pepper

  • 1 garlic clove, grated finely

  • 100mls olive oil

  • Retro Prawns

  • 4 cooked tiger prawns per person, peeled and de-veined

  • 1 bunch of rocket leaves

  • 1 avocado

  • Prawn Dressing

  • 1 tbls mayonnaise

  • 1 tbls cream

  • 1 tsp chilli sauce

  • 1 tbls lemon juice


  • Margaret’s Warm Scallop Salad:

  • 1.

    Lightly oil scallops and season with salt and pepper

  • 2.

    In a hot cast iron pan sear scallops for 1 minutes each side

  • 3.

    Assemble scallops on top of watercress and drizzle with dressing. Mix all scallop dressing ingredients in a jar.

  • Retro Prawns:

  • 1.

    Wash rocket leaves and divide equally on plates

  • 2.

    Peel Avocado and slice, divide equally on plates

  • 3.

    Place 4 tiger prawns on each plate

  • 4.

    Drizzle with dressing and serve
