Margaret’s Warm Scallop Salad:
Lightly oil scallops and season with salt and pepper
In a hot cast iron pan sear scallops for 1 minutes each side
Assemble scallops on top of watercress and drizzle with dressing. Mix all scallop dressing ingredients in a jar.
Wash rocket leaves and divide equally on plates
Peel Avocado and slice, divide equally on plates
Place 4 tiger prawns on each plate
Drizzle with dressing and serve
