Try Deb's Spinach, Salmon & Herb Roulade from Week 3 of COME DINE WITH ME AUSTRALIA series 2.
Cook Spinach in pot until defrosted and all water has evaporated.
Melt butter in separate large pot, add flour and cook for approx 2 minutes
Add Milk and stir until smooth and thickened
Stir in Spinach, remove from heat and stir in yolks.
Beat egg whites to stiff peaks, gently fold through spinach mixture,
Pour mixture into greased and paper lined swiss roll tray.
Bake in hot oven approx 15 mins or until puffed and golden.
Turn onto tea towel covered cooling rack and remove paper.
Pick over Salmon, remove bones and dark skin.
Mix in mayonnaise, herbs, capers and spring onions.
Spread onto base and roll up, using tea towel as guide.
